    Step by Step Process – Raspberry Pistachio Mousse Cakes

    Step 1: Make the Pistachio Sponge

    1. Preheat your oven to 350°F (175°C).
    2. Blend the pistachios in a food processor until fine (like almond flour).
    3. Beat the eggs and sugar until light and fluffy (about 5 minutes).
    4. Gently fold in the pistachio flour, regular flour, salt, and melted butter.
    5. Pour into a flat baking tray lined with parchment paper and bake for 10–12 minutes.
